2/3 C semi-sweet dairy-free, fair-trade chocolate chips
2 + 1/3 Tbsp C peanut butter
1/3 C peanuts (optional)
4 C Kellogg's Crispix cereal (apparantly in UK it's not vegan, but in the US it is)
2/3 C powdered sugar
In a large microwave-safe bowl, melt chocolate on high for 1 minute, stir and heat for 30 seconds or until melted. (You can burn chocolate in the microwave.) Stir in peanut butter and peanuts. Gently stir in the cereal until well coated.
Place the mixture into a large plastic storage container. Add the powdered sugar, put the lid on and gently turn the container around to coat the pieces. Store in the refrigerator.
