Chocolate Walnut Pie

2 uncooked 9 in. pie crusts (the frozen whole wheat ones are nice)
1/4 C Flax seeds
3/4 C water
1 1/2 C beet sugar
4 1/2 Tbsp light olive oil
2 tsp vanilla
3/4 C flour
1 1/4 C semi-sweet, dairy-free, fair-trade chocolate chips
1 1/2 C chopped walnuts

Preheat oven to 325 F. In a blender, grind the flax seeds well (be patient). Add the water and blend for ~2 min. In a bowl combine the flax mixture, sugar, oil and vanilla. Then add the flour, chocolate chips and walnuts.

Pour into the crusts. The pies should bake for 65-75 min (perhaps longer, I can't quite remember). The recipe was originally for a 10 in. pan, so the pies are somewhat shallow.

Serve warm with vanilla Soy Dream "ice cream"!
